CHUNKED VEAL RAGOUT

INGREDIENTS
500 gr veal, without fat, chunked
20 pearl onions, peeled
2 cloves garlic, peeled
1 tablespoon vinegar
3 tablespoons butter or margarine
1 teaspoon cinnamon
1 teaspoon allspice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon red pepper

PROCESSING METHOD
– Brown chunks of meat in butter until they absorbe juice.
– Add the garlic, pearl onions on which you leave one layer of red skin. Brown them as well for 5 minutes.
– Add pepper, red pepper, vinegar, allspice, cinnamon, salt and 4 glasses of water.
– Cook on medium heat for about 3 hours.
– Serve with rice.
