FRIED PRAWN SALAD ( 7 )

SERVES : 4

INGREDIENTS
12 raw king prawns
125 gr green bean, trimmed, sliced
3 tablespoons virgin olive oil
1 tablespoon fresh root ginger, finely shredded
1 lime juice
1 lime peel, grated
3 teaspoons soy sauce

PROCESSING METHOD
* Peel prawns, leaving tail shells on. Make a small incision along spines. Remove black spinal cords from prawns.
* Cook snow peas in boiling water for 1 minute, drain and arrange on 4 plates.
* Heat the oil in a large frying pan, add prawns and ginger and cook gently for 5 minutes, turning them once.
* Add lime juice, lime peel and soy sauce, cook for 1 minute.
* Arrange the prawns on the green bean, then pour over dressing.
* Serve at once.
